These days, guavas have been filling my kitchen with their fragrance. I made a delicious oatmeal porridge with them, and since I still had some left, I decided to bake a cake. Well, I had to search online and found the recipe I'm going to share with you today.
I saw this recipe on a YouTube channel called "Easy Vegan Cooking," and I loved it from the moment I saw it because I had all the necessary ingredients on hand. Of course, I made a few small changes, but the essence is the same.
To be honest, I was really impatient to try this cake, so it was still a little warm when I tasted it, and I can assure you it's absolutely delicious, fluffy, and a little moist. En estos días las guayabas han perfumado mi cocina, con ellas he hecho un delicioso atol con avena, y como aún quedaban algunas se me ocurrió hacer un bizcocho, bueno tuve que buscar por internet y me conseguí con la receta que les compartiré el día de hoy.
Esta receta la vi en un canal de YouTube, llamado, cocina vegan fácil y desde que lo vi me gustó mucho, porque tenía a la mano todos los ingredientes que se necesitan, por supuesto le hice unos pequeños cambios pero la esencia es la misma.
Si les soy sincera, tenía mucha impaciencia a la hora de probar esta torta, así que aún estaba algo caliente cuando la probé, y te puedo asegurar que es muy deliciosa, esponjosa, con un poco de humedad y lo mejor son los pedacitos de guayaba que se consiguen en cada bocado, si eres amante de esta fruta, entonces esta receta es para ti 👌

-300 grams all-purpose wheat flour
-50 grams almond or oat flour
-350 grams guava pulp
-180 grams sugar
-100 ml extra virgin olive oil or any other vegetable oil
-150 ml plant-based milk (almond, oat, or soy)
-1 tablespoon baking powder
-3 tablespoons cornstarch
-1/4 cup filtered water
-1 teaspoon vanilla extract
-Pillow pan: 20 cm in diameter
-300 gramos de harina de trigo todo uso.
-50 gramos de harina de almendras o de avena.
-350 gramos de pulpa de guayaba.
-180 gramos de Azúcar.
-100 ml de aceite de oliva virgen o cualquier otro aceite vegetal.
-150 ml de leche vegetal, puede ser de almendras, avena o soya.
-1 cucharada de polvo para hornear.
-3 cucharadas de fécula de maíz.
-1/4 taza de agua filtrada.
-1 cucharadita de esencia de vainilla.
-Molde: 20 cm de diámetro.
Preheat the oven to 180 degrees Celsius.
Prendemos el horno a 180 grados centígrados.
Now we are going to carefully remove the shell from the guavas. These must be thoroughly washed beforehand. Once we have removed the shell, we are going to carefully remove the seeds and put these seeds in a separate container because we are going to use them.
Then we finely chop the seedless guava pulp and set it aside.
Then we're going to put the seeds in the blender. These seeds are probably full of guava pulp, so we're going to blend them with 150 ml of plant-based milk. I used almond milk. After blending very well, we'll pass this mixture through a strainer. This is so that we don't get any seeds in our cake.

Now in a glass we pour 1/4 of water and the three tablespoons of cornstarch, mix until the cornstarch is well dissolved.
In a container, we put the oil, the preparation we made with the starch and the sugar, and mix until the ingredients are well integrated.
Now we add the guava smoothie, the vanilla essence, and mix again.
Add the wheat flour and baking powder, sift these ingredients, mix a little and add the almond flour, you can use oat flour.
We will mix until we obtain a homogeneous and very thick mixture, then we add the guava pulp that we had finely chopped, mixing with folding movements, so that the guava is well integrated throughout the mixture.
We pour our mixture into a previously greased and floured mold.
We bake it in the oven for approximately 45 to 50 minutes and remove it when the pastry toothpick inserted comes out dry.
Let it rest, then unmold and enjoy! 😍👌 It's the first time I've tried this cake and I loved it, it's pure guava in every bite!
