My boyfriend and I went on food adventures during the last week of April which resulted in extra pounds. 😅 I always tell myself that cutting down some unwanted and unnecessary weight is easy once you've done it in the past. Proved that theory once again last week.
So last May 1, 2023, I decided to walk to our City's public market to buy fresh supplies for my entire week's worth of meals including healthy snacks. We recently moved to our new office on the 3rd floor so we got plenty of room for meal preparation and there's a new double-door refrigerator that's more than enough to accommodate our frozen storage needs.
Right there and then, I decided I'll eat salad for the entire week, no rice and my protein source is no other than baked chicken breast. The greatest thing about being creative in the kitchen is that experimenting never leaves you scared. I experimented with whatever was available in our house for the chicken marinade and I ended up with a savory chicken breast with a touch of sweetness from honey and a little kick of spice from the Indian chili powder I ordered from Lazada that I both added in the marinade.
The salad I made was very simple; all the ingredients I used could be easily bought at groceries or wet markets near you. I could only find iceberg lettuce in our public market; no other option for me, if you could find any greens of your choice, the better. I made sure there were cucumber, mango, tomatoes, white onion, carrots, and apples (for snacks). The dressing I made was a simple vinaigrette. I am planning of making other dressings in the next few days.
Caution: this diet is not for all. I knew some friends and even family members who couldn't live without rice. In my case, I've had an extreme diet in the past so this is nothing new to me.
