Hello my friends, now I will share with you a new recipe from potatoes. It's called "Potato Stew Soup". This is also my entry in the @ecotrain contest with their theme: "Making a potato humble Shine". Potatoes contain many nutrients and they are very good for health, especially good for the heart, bones, eyes, brain, digestive system and immune system. Plus potatoes are an easy ingredient to cook and they're delicious, there's no reason for me to hate potatoes.
Do you like to eat potato soup? In this recipe I used potatoes and pork bones as the main ingredients, however to add more appeal to the dish I also used some other vegetables. Bone broth soup is a popular dish in Vietnam, people often eat it mainly in winter because they have a warming effect on the body. The sweet bone broth combines with potatoes and other spices to create a delicious broth. Do you see? This dish is full of color and nutrients, and, above all, delicious.
Because the cooking theme is potatoes, I use potatoes as the main ingredient and use only a few other vegetables for the side dishes. Wash the ingredients and and let dry, cut the corn and mushrooms into bite-sized pieces. Cut carrots into flower-shaped pieces. Separate the broccoli into smaller portions. Peel the potatoes and cut the potatoes into small cubes. Marinate the potatoes with salt and leave for 30 minutes.Half of the potatoes I use to boil until tender, use a spatula to puree the potatoes until they are smooth. This step makes the potato soup thicker and sweeter. I often ask the butcher to chop the bones for me so that I can save cooking time. For pork bones I have to wash many times with water, then I put the bones in the pot and add water, bring to a boil or until the pork bones turn white, then turn off the heat. Pour pork bones into the water bath, rinse the pot and pork bones again to remove dirt. Then put the pork bones in the pot again and add seasonings such as salt and broth mix, cover the pot and cook on medium heat for about 30 minutes. Bring a pot of water to a boil, shape lean pork paste into small balls, then place in the pot and cook for about 5 minutes until they float, they are cooked. Take it out. Add the potatoes and sweet corn to the pot and cook until the potatoes are soft (about 10 minutes), then add the rest of the vegetables,and lean pork paste continue to cook for a few minutes, to make the dish sweeter than Vietnamese people usually use monosodium glutamate.
