Rajas Quesadillas with Salsa Fresca & Lime Crema

Hello again, & happy holidays. I hope we are all doing well & staying healthy. One good way to keeping healthy is eating good foods & today I have a Vegetarian recipe to share. No meat what's so ever in this dish, however, if you wanted to, you could add some chicken to this if you wanted to.

Ingredients for this meal:
Flour Tortillas (2) (you'll want the big ones, the burrito shells)
Shredded Mexican Cheese (2 oz)
Shredded Pepper Jack Cheese (2 oz)
Poblano Pepper (2)
Red Onion (1)
Roma Tomato (2)
Southwest Spice Blend (1 TSP)(Southwest Spice is a mix of chili powder, garlic powder & cumin)
Sour Cream (2 TSP)
Lime (1)

Additional Ingredients:
Salt
Pepper
Water
Oil

STEP ONE

The first step to starting any meal should be to clean your workstation. The countertop that you'll be working at, the stove, the cutting board as well as the vegetables you'll be eating. You never know who in the past has handled them. So a light scrub down with the potato scrubber to the tomato's & the pepper is how I started.

STEP TWO

We will start out by prepping our vegetables. We will dice the poblano pepper into small but bitesize squares.
Half & peel the red onion & then thinly slice the onion. Then finely chop 1/4 of that onion & place in a regular bowl on the side.
Next we dice up the tomato's.

STEP THREE

In a regular bowl like the one I have the sliced onions in, we will combine 1/2 of the diced tomato's, the chopped onion, & 1/2 lime juice. Season with both salt & pepper.

STEP FOUR*

In another bowl take 1 TSP sour cream, a small squeeze of lime juice & salt & pepper. If you like extra sour cream on your dishes, you should add more sour cream right here. Maybe another TSP or 2.

STEP FIVE

Heat a drizzle of oil in a medium sauce pan over medium-high heat. After a minute or so once the pan gets hot, add the poblano pepper & onions. Cook this stirring every now & then until softened. About 7-8 minutes.
Once softened, add in the southwest spice, 1 TSP sour cream, 2 TBSP water & the rest of the diced tomato's.
Cook about another minute or so until the sour cream is mixed in well. Season with more salt & pepper if you like.

STEP SIX

Place those big tortilla shells on that clean countertop we did in STEP ONE. Add 1 oz shredded cheese to each tortilla shell. Add 1/2 of the veggie filling to each shell on top of the Mexican cheese blend. After, add 1 oz pepper jack cheese to the top of the filling.
Fold the shell over to make quesadillas.

STEP SEVEN

Wipe out the previous sauce pan we used to cook the veggie filling with.
Add a drizzle of oil in pan & let this really get hot because we need to brown the quesadillas.
Once hot, add the quesadillas to the pan & let cook until browned, about 2-3 minutes. Flip over & do the other side as well.

That's basically it for this meal. Next it's just to platting & adding the crema to the top as well as the salsa fresca to the top & serving to whomever is hungry.
I basically ate both servings it was that good.
