COMFORT FOOD

Brrr.. it’s cold out there! 25* & feels like 15* we are in the midsts of an Ice storm. So to warm us up I’m going to make some Hardy loaded baked potato soup! This recipe is easy & cheap! I hope u try it & enjoy it!

Makes about 8 servings u can halve it if u don’t need so much! But it tastes even better the next day!

What u will need ...

6 - med sized Baked potatoes
4 - green onions
1 - clove of garlic
4 - slices of bacon
1 - box 32oz or 4cups chicken broth
2 - cups milk
1 - tsp salt
1/2 - tsp black pepper
2 - cups sour cream
Shredded cheddar cheese & extra Bacon to top

Let’s get started... First things First if u plan ahead u can bake the potatoes the night before scrub potatoes clean, pierce with fork throw them in the oven & bake on 400* for one hour.

If u bake them the night before, just leave out to completely cool, if u bake them just before making the soup allow them to cool so that u don’t burn ur fingers trying to peel them!

While potatoes are cooling cook your bacon. U can fry it up & then just crumble it, or u can do what I do and cut it into strips & then little pieces & fry it to the crispyness u like. Drain on paper towel & set aside. discard
all but 3 Tablespoons of the bacon grease. Set aside or put in soup pot for use later.

Peel ur potatoes & cut 4 of them into bite size pcs. Mash the remaining 2 potatoes.

Dice the green onions, & the clove of garlic. I use a garlic press for mine it’s much easier than trying to cut up that Lil sucker!!

In a pot on medium heat, place the reserved bacon grease , add diced potatoes , onions, garlic , salt & pepper , sauté all until the onions are soft.

Pour in chicken broth, milk & add the mashed potatoes into the pot, mix well , bring to a boil, then turn down & simmer for 20-30 min.

Don’t forget the mashed potatoes..

Take off burner and whisk in the sour cream & reserved bacon bits.

Return to burner & warm through, the sour cream cools it off, DO NOT BOIL!

That’s it! Serve with shredded cheddar cheese & extra bacon bits on top!

To make this a chowder chop up the meet from a rotisserie chicken or a couple of poached chicken breasts and a can of yellow corn at the end & heat through!
