Savory Spinach Pancakes

Hi everyone!

This was the most fun video to shoot as it was completely impromptu! I was actually rushing home to shoot another video idea I had planned and wanted to quickly eat a nutritious dinner. I whipped up this meal as it was items I had on hand at home, and I love to get creative and see what I can make with whatever is in the fridge and pantry.

This came out so delicious that I had to share the recipe with you! So often we are in a rush and grab something maybe that’s not so good for you. This receipt you can make in 10 minutes and is great for any meal of the day, a snack, or even an appetizer you can bring for a party. Your friends and family will thank you if you make these, I promise!

Ingredients:
½ c. boiling water
2 cups fresh spinach
2 tsp Coconut oil (or butter or olive oil would work fine)
2 eggs
¼ c. cream of rice cereal (yay it’s gluten free!)
Sea Salt (I use Pink Himalayan sea salt)
Seasoning of your choice (I used Lemon Pepper and the flavors worked great!)

Steps:

Put half of the rice cereal in a bowl, pour enough hot water to cover the cereal, and then put a plate over the bowl to let it steam on it’s own.
Sautee the spinach in a pan with 1 tsp of cocnut oil until it is wilted down to half its size.
Crack 2 eggs in a bowl
Add the cooked cereal from step 1 slowly to the egg bowl while stirring the eggs so as not to cook them in the bowl.
Stir in the rest of the cream of rice cereal and spinach
In your pan, add in another teaspoon of coconut oil and spoon the batter into the hot pan to make pancakes that are the size you prefer
Top with sea salt and seasoning
Flip over when they are a nice golden brown and let them cook through another minute.
