Instructions:

1. Begin by adding 1/2 cup of mayonnaise, 1 tablespoon of Dijon mustard, 1 1/2 teaspoons of Worcestershire sauce, 1 teaspoon of hot sauce, 1/4 teaspoon of salt, 1 teaspoon of lemon zest, 1 teaspoon of lemon juice, 1/4 teaspoon of black pepper, and the egg into a large mixing bowl. Whisk these ingredients together until well combined.

2. Gently fold in the fresh herbs (parsley, optionally chives, and tarragon), minced red onion, and lump crab meat, being careful not to over mix to preserve the lumps of crab.

3. Sprinkle the Panko breadcrumbs over the mixture and fold them in until just incorporated.

4. Shape the crab mixture into patties, using about half a cup of the mixture per patty. Aim for patties that are approximately 3 inches in diameter.

5. Place formed patties on a lined baking sheet, cover, and refrigerate for at least 20 minutes to 6 hours to allow them to set up properly.

6. When you're ready to cook, you can either pan-fry or bake them:

- For pan-frying: Heat some oil or butter in a skillet over medium-high heat. Cook the patties until golden brown on each side, about 3-5 minutes per side.

- For baking: Preheat the oven to 375°F (190°C), and bake the crab cakes for 15 minutes, or until they are golden brown and heated through.
