- Lettuce, shredded

- Red and yellow bell peppers, julienned

- 1 tomato, sliced

- Carrots, julienned

- 1 small onion, sliced

- Cilantro, chopped

- Olive oil (for dressing)

For the Tahini Sauce:

- Tahini paste

- Lemon juice

- Salt (to taste)

- Black pepper (to taste)

Additional:

- Pita bread

- Hot chili sauce (optional)

Instructions:

1. Start by making the falafel. In a food processor, add the chickpeas and process them until you have a coarse mixture. You may need to work in batches to achieve the right consistency. Do not over-process into a paste.

2. To the chickpea mixture, add the garlic, onion, jalapeno, cilantro, parsley, and blend again until all ingredients are combined.

3. Transfer the mixture to a bowl and add salt, black pepper, cumin powder, coriander powder, chili powder, and lemon juice. Mix thoroughly. If the mixture is too moist and won't hold its shape, you can add a little rice flour or cornflour.

2. Drizzle tahini sauce over the pita, then place three falafels in the center.

4. Drizzle more tahini sauce on top, then carefully wrap the pita around the fillings, folding the bottom up and then rolling it tightly to secure.
