I know that it's Valentine's Day and everyone is probably planning special, romantic meals for their special love. And, I'll do that too...for tonight's meal. But, for now, I'm showing my love everyday to my Dear Hubby by making sure that he has a delicious, plant-based meal to eat every day at lunch.
Today's lunch is a Chickless Salad with Arugula on Sourdough Bread. I paired it with a mix of fresh fruit (blueberries, strawberries and blood oranges), drizzled with cashew pastry cream. Crunchy chickpeas rounded out his meal.
I made this delicious Chickless Salad from a locally made product called Delight Soy. I'll share a review of the product and the full recipe (and an additional recipe) in an upcoming post.
