Rustic Strawberry Custard Tart // Vegan
Strawberries!
What makes them special?
They smell amazing! As soon as I smell strawberries my mouth waters, and when ripe they are juicy and sweet. Strawberries carry healthy amounts of vitamin C, manganese, B9, and potassium. They also have a small amount of iron, copper, magnesium, phosphorus, vitamin B6, vitamin K and vitamin E. They are loaded with antioxidants such as polyphenol which has long lasting health benefits when consumed regularly: it increases energy levels, reduces the risk of many chronic diseases, improves heart health, lowers blood sugar levels and helps prevent cancer.
Curiously…
Even though strawberries are known to be berries, there are studies that explain that strawberries are an 'aggregate fruit', they form from flowers that have many ovaries and when these ovaries are pollinated they swell forming a ripe strawberry. Flowers with many ovaries are considered 'complex fruits', like: blackberries, strawberries, raspberries, etc.
Berries on the other hand, are known as 'simple fruits' because they grow from only one ovary. These include grapes, watermelons, tomatoes, bananas, etc.

Berries being this weeks theme was a delight because I am nuts about strawberries, for this weeks contest I am presenting you rustic strawberry custard tarts, a vegan version!
Ingredients:
Dough:
- 1cup 1/2cup whole weat flour
- 1/4 cup coconut oil
- 4 tablespoons of cold water
- Pinch Sea Salt and pepper
- Bring all the ingredients together until you get a dough
- Place the dough in tart forms and use your fingers to shape them
- Bake at 180°C (350°F) for 15 minutes
Strawberry Custard:
- 350ml coconut cream
- 1 cup of strawberries
- 2 tablespoons of flour
- 1 tablespoon of maple
- 1 teaspoon of vanilla extract
- Blend coconut cream with strawberries add maple and vanilla.
- Place it in a pan and add the flour stir it all on low heat until thickens.
Strawberry juice:
- 1 cup of strawberries
Cook the strawberries in a pan on low heat for 10min.
Chocolate sauce:
- 1/4 cup chocolate powder
- 2 tablespoons of coconut oil
- 1 tablespoon of maple syrup
- Pinch of salt
- Place the coconut oil in the pan on low heat, when melted add chocolate, maple syrup and salt.
- Stir until well mix together for about 3-5min.
