How to Make Seekh Kebabs
Ingredients:
- 1 kg minced meat
- 3 large onions, finely chopped
- 4-5 green chilies, finely chopped
- 1 tsp chaat masala
- 1 tbsp each of mint and coriander paste
- 2 tbsp ginger garlic paste
- 3-4 tbsp coriander powder
- 2 tbsp garam masala powder (adjust to taste)
- 1 tsp cumin powder
- 1 tsp black pepper powder
- 1 tsp turmeric powder
- 1-2 tbsp yogurt
- 1-2 tbsp roasted chickpea flour (optional)
- Red chili powder, to taste
- Salt, to taste
- Butter, for basting
- Oil, for mixing
Instructions:
Step 1: Prepare the Meat Mixture
- Start by adding the minced meat (1 kg) into a mixing bowl.
- Add the finely chopped onions (3 large), and 4-5 finely chopped green chilies into the bowl.
- Add 3-4 tbsp of coriander powder, 2 tbsp ginger-garlic paste, 2 tbsp garam masala powder, 1 tsp cumin powder, 1 tsp black pepper powder, 1 tsp turmeric powder, and red chili powder to taste.
- Add 1 tsp chaat masala, salt to taste, and 1-2 tbsp yogurt.
- Add 1-2 tbsp roasted chickpea flour to help bind the mixture.
- Add 2 tbsp of mint and coriander paste for extra flavor.
- Mix everything thoroughly with your hands to combine all the ingredients evenly.
Step 2: Marinate
- Add some oil (2-3 tbsp) to the mixture and mix well.
- Cover the bowl with a lid and leave it to marinate for about an hour. This allows the flavors to blend and the meat to soften.
Step 3: Shape the Kebabs
- After marination, take small portions of the mixture and shape them into cylindrical kebabs around skewers.
- Ensure the mixture is firm enough to hold its shape. If it feels too wet, add a little more chickpea flour.
- If you don’t have skewers, you can shape the kebabs by hand, using a pencil or similar object to create a skewer-like impression.
Step 4: Cook in the Microwave
- Place the kebabs in a microwave-safe dish.
- Brush melted butter over the kebabs to keep them moist during cooking.
- Cover the dish with plastic wrap and make a few small holes in the wrap to allow steam to escape.
- Microwave the kebabs for 3 minutes on 100°C.
Step 5: Fry the Kebabs
- After microwaving, remove the kebabs from the dish.
- Fry the kebabs in a non-stick pan with a little oil to give them a tandoori flavor, turning them to ensure they are browned evenly on all sides.
- On the side, heat a piece of charcoal. Place it in a small foil dish, add some butter on top, and cover the pan to infuse the kebabs with a smoky flavor.
Step 6: Serve
- Remove the skewers from the kebabs, and place them on a serving dish.
- Garnish with onion rings, lemon slices, and tomatoes.
- Serve hot with green chutney or your favorite dipping sauce.
