This was potentially the best steak I have ever eaten. It was a 40 day dry aged bone-in rib eye. My local butcher soaked a piece of cheese cloth in Jack Daniels bourbon and wrapped the whole cut of beef before storing it in the dry age cabinet. Every few days he'd resoak the cloth and boy did the beef take on some flavour.
10 days at a time, the weight of the piece of beef decreased intensifying the flavour... This type of beef is the for the real beef lover!
The cooking process was as intense as the flavour. At $80/kg I couldn't risk making a mistake. First the pan needed to be HOT and oiled. I out the 1.5 inch think steak into the griddle pan to seal it. 60 seconds on one side, then 60 seconds on the other. Turn it to back and let the fat render down a little.
Remove it from the pan and place it on an already hot oven tray. Cook at 180°C for 7 minutes. Place the steak onto a warm plate and allow to rest for 10 minutes.
I will definitely be buying this type of steak again! It was sensational!
