Baking cookies is definitely my thing, I should sell them jajaja, they are so easy to make, so versatile and delicious that they end up being addictive. With the last rice flour that I prepare at home I set out to make these delicious coconut biscuits, after all I have to try the product before I show you a recipe, I can't share something that doesn't work.



Delicious accompanied by a good cup of coffee, these cookies come loaded with too much coconut for coconut lovers to love them. I must say that my rice flour looks great and these cookies are proof of that, you can also use any commercial rice flour, the result must be just as great.



With a very soft and delicate texture, these coconut biscuits are worthy of any pastry shop, I insist you should sell them ha ha ha, at home everyone fell in love with them, and really did not take long to finish. But come with me and I'll tell you how you can prepare them. Enjoy!

Ingredients


  • 2 1/2 cup rice flour.
  • 1 Cup of sugar.
  • 1 tsp sodium bicarbonate.
  • 1 Tbsp coconut essence.
  • 1 cup grated fresh coconut.
  • 1/2 Oil cup.
  • 2 Eggs.
  • 1/4 cup coconut water

    • Baking time: 15 Minutes
    • Time Total: 30 Minutes
    • Yield: 48 biscuits


    • Making cookies is very simple and here you will see that it is true. We begin adding in a cup the eggs with the sugar, we beat very well until emulsifying, to continue adding the oil and the coconut water, we continue beating so that everything is well unified.




      We continue adding the rice flour, to which we have previously placed the sodium bicarbonate, with the help of a palette we integrate everything very well and then add the grated coconut, you can use the one you buy in the stores if you wish.




      With our dough ready, we only have our biscuits left, with the help of a spoon we are forming balls and placed in a tray with paraffin or buttered paper, we take to a preheated oven at 180 ° C for 15 minutes, or until they start to brown on the bottom, and ready our delicious coconut biscuits, to see if they endure the temptation to eat a fresh exit from the oven.



      Definitely with this recipe I can say that my homemade rice flour is a success, these cookies were delicious, in addition that the flavor that gives the coconut is unique, is that everything that has coconut is rich. Ideal to accompany with a delicious "dulce de leche", if you want to consume them without any type of drinks, because with a cup of coffee they are a perfect combination.
