Well garnished Albacca (cassava flakes dish) has always been my number choice when it comes to local delicacies, not just me but my husband's as well,
You couldn't imagine the joy on his face when I told him that I was going to prepare Albacca,
He asked that I prepare it at night, as he was going to work and wouldn't enjoy it in the morning but I was craving for the dish in that morning and couldn't wait anymore .
I had to plead with him to spare me some time in the morning, so we can enjoy it together and hopefully,he accepted.
I really enjoyed the sweet, delightful dish with my husband and Below is a process of how I made it.
- Half paint of dry Cassava flakes
- 1/2 cup of red oil
- 1/4cup of ngo
- 3-4 pieces of ehuru
- 6 pieces of red pepper
- A handful of baby garden egg
- 3 stems of garden egg leaf
- Salt to taste
- 1 medium sized onions
NGO is a traditional ingredients for making Albacca, it is process by burning palm fruit leafs and then soaking the ashes in water,
NGO is water gotten from soaking the ashes of burnt palm fruit leafs.
Ehuru is a powerful local , natural spices for Albacca.
Albacca dish is simple dish to make, it is prepared by following this few steps...
I started by boiling some hot water, then I brought out a clean bowl and poured my dry Cassava flakes into the bowl,
I poured the hot water into the bowl containing the dry Cassava flakes and covered it thereby allowing the hot water to soften the dry Cassava flakes (I covered it for 2minutes).
After the two minutes, I poured the cassava flakes into a sieve to drain out the water and then I set it aside
In a clean plate, I poured my 1/2 cup of red oil and gradually added my NGO ,
I stirred both of them together (while stirring ,you would notice the change of color in the oil as well as the thickness)
I pound my ehuru first Using a porter and then I sliced my red pepper , washed my baby garden egg and then set them aside
I then add my ehuru,salt, baby garden egg to the oil,and stirred then together
Now is time to add the cassava flakes,
I added the cassava flakes and stir it very, so all the ingredients could mix together ten I added my garden egg leaf onions and remaining pepper for garnishing.
My well garnished Albacca (cassava flakes dish ) is ready, where is your cold palm wine 😍.
Looking at the dish ,it is very tempting to the eyes and beauty,
The taste is excellent, all ingredients were added in moderation and the flavor is topnotch.
