Hello friends in Vegan Community, Spicy-flavoured dishes can increase our appetite, this is because the heat generated by spices will burn our tongue receptors, so we are more appetizing to enjoy the dish.
This afternoon I bought white tofu and I plan to make fresh-flavored dishes. I chose sumedang tofu because it has a more chewy texture. White tofu will usually be processed into dishes by frying before processing. The soft texture of tofu with a tasteless taste will be more pronounced if the tofu is fried before processing
Today I don't have an appetite because of the scorching hot weather, so I decided to cook tofu with green chilies. I want to eat something super spicy, gravy but fresh without the content of cooking oil and sugar. I will cook white tofu with green chilies and other spices. Spicy tofu taste with a fresh and super spicy sauce is able to shake the tongue. This dish is perfect for lunch.
PREPARATION
First I will process the tofu with an air frayer, I don't fry the tofu in cooking oil, so I don't need cooking oil. My goal in using an air frayer is to reduce the water content in the tofu so that the tofu has a drier texture and does not crumble when processed. I put it in a air frayer with a temperature of 200 degrees Celsius for 20 minutes.
After we put it in the air fryer, the white tofu becomes brownish with a half dry texture. The texture of the tofu has also become harder and the unpleasant smell has disappeared
The ingredients that I use to make green chili white tofu are:
30 pieces of white tofu (Sumedang tofu that has been processed with an air fryer)
green chilies 100 grams
tomatoes 2 pieces
2 stalks of lemongrass
1 piece of ginger
red onion 5 piece
garlic 5 pieces
salt 1 tablespoon
2 tablespoons chili sauce
2 bay leaves
1 pack ground pepper (adjust to the level of spiciness we want)
500 mL water
How to cook it
1.wash the green chili and then slice it thinly, how to slice it make slices slightly oblique and lengthwise like this
2.wash the ginger then cut into small pieces, add ginger to strengthen the spicy taste and make the dish more fragrant.
3.wash the lemongrass stalks and then bruise them, this will release the fragrance of the essential oil contained in the lemongrass stalks.
4.puree the onion, garlic and tomatoes, I use a blender to puree it. then add water. blender until all ingredients are smooth.
5.add the spices that have been mashed into the pan.
6.add sliced green chilies, ginger, bay leaves and lemongrass stalks to the pan.
7.cook the spices until it boils
8.after the seasoning boils, add Sumedang tofu.
9.add chili sauce and salt
10.add pepper powder to taste,then stir so that the spices are evenly mixed.
10.cover the pan so that it cooks evenly and the spices seep into the tofu.
11.after the gravy is reduced then turn off the stove.
12.serve when warm
our family used to enjoy it with warm rice.
