Sri Lankan pancake recipe.

Wishing a very good day to all my dear friends! How are you all doing?

Since today is a relaxing day with everyone at home, I wanted to prepare a snack for tea time. The first thing that came to my mind was to make a pan cake (Pan Cake). It’s a recipe that's incredibly easy to prepare and perfect for enjoying the beauty of tea time. I made this in a vegetarian-friendly way so that everyone can enjoy it. This is a popular recipe available in the markets here, but I decided to make it at home to ensure cleanliness and healthy ingredients. Now, let’s take a look at how to prepare this delicious dish using just a few simple ingredients.

Materials Used.

Wheat flour 200g.
Sugar 100g.
1/2 Cup of hot water.
Salt to taste.
1 Cup of Grated coconut.
1 Teaspoon of coconut oil.
1 Teaspoon of vanilla.
1/2 teaspoon of turmeric Powder.

The cooking process as follows.

First, we'll make a mixture using coconut and sugar syrup. To start, place a pan on the stove and add about one tablespoon of sugar. Allow the sugar to caramelize until it turns a golden-brown color. After that, add some hot water gradually while stirring continuously. Once it's mixed, add the rest of the sugar and continue stirring until everything dissolves and turns into a smooth caramel syrup. During this process, add a pinch of salt and a dash of vanilla for flavor.

Now, add the grated coconut to the caramelized sugar mixture. Stir the mixture continuously for about 4 minutes, allowing the moisture in the coconut mixture to reduce. Once the mixture thickens and the coconut is well incorporated, remove it from the heat.

Next, take a bowl and add some wheat flour to it. Then, add a pinch of turmeric powder, a teaspoon of coconut oil, and a little salt. Mix everything well. Gradually add water while stirring to create a smooth and runny batter.

Now, take a roti plate and heat it up. Place a piece of banana leaf on top. Then, apply some coconut oil over the leaf. Once the banana leaf is hot, pour a small amount of the thin batter onto it, spreading it in a circular shape. Once it's cooked and firm, remove it from the heat. You can also do this same process using a regular pan if you prefer.
