This time, I want to share the Lappet Bulung recipe, one of the legendary traditional plant based snacks in my city and I also made this recipe from Lappet Bulung to take part in the challenge from @qurator at Hive Top Chef which is held every week.
What is Lappet Bulung?
Talking about Lappet Bulung cannot be separated from the cultural diversity in my country, Indonesia. As friends know, I live in Medan City, North Sumatra Province – Indonesia. My country is in the form of an archipelago and includes a fairly large country in Indonesia. One of the uniqueness of my country compared to other countries, is the diversity of cultures and ethnicities that exist in Indonesia. This cultural diversity also influences the many delicious traditional culinary delights that we can find in Indonesia.
Lappet Bulung is a traditional cake made from rice flour, palm sugar, coconut and sweet potato. Lappet Bulung is considered a traditional cake that comes from the Batak ethnicity. Batak ethnicity is one of the ethnic groups in Indonesia originating from North Sumatra Province. This traditional cake is often found during traditional events or traditional parties in the Batak community. But the popularity of this traditional cake has waned because of the many modern snacks that are easy to find with more attractive packaging.
Currently, it is difficult to find sellers of this cake in markets or cake shops. One of the reasons people are reluctant to do business selling this cake is because, Lappet Bulung is best served hot and to keep this cake warm, we have to steam it. You need a steamer and a stove to keep this traditional cake warm.
I love Lappet Bulung, and I learned how to make it from my late grandmother. I have dreams and aspirations, when one day I have my own coffee shop. I want Lappet Bulung to be one of the food menus available at my coffee shop. Of course it's very pleasant, a cup of coffee with this sweet traditional cake. Because of that, I also want to share recipes and how to make Lappet Bulung which is simple and easy for all my friends.
Ingredients :
250 grams of Rice Flour
250 grams of grated coconut
200 grams of sweet potato
150 grams of palm sugar (already sliced)
½ spoon of salt
Pandan leaves thinly sliced
Banana leaves to wrap the cake
How to Make Lapel Bulung
Clean the sweet potato and cut it into smaller pieces, then boil the sweet potato until the texture is soft. There are two versions of this lappet bolung, first without using sweet potato and secondly, using sweet potato. The original version doesn't use sweet potato, just rice flour and coconut as the basic ingredients.
After the sweet potato is cooked, transfer it to a basin, then add 250 grams of rice flour. Stir and mix the two ingredients until smooth.
When the sweet potato and rice flour mixture is thoroughly mixed, we add grated coconut to this mixture.
Stir all the dough until well blended.
After all the mixture is well mixed, we prepare banana leaves and shape them like a funnel. Put a little dough first, then put the palm sugar in the middle of the dough then add more dough to cover the palm sugar.
Fold the banana leaf to form a pyramid or pyramid. At first it was difficult to make packing like this, but once you get used to it it will definitely be easier.
After all the cake dough is wrapped neatly. We prepare a steamer and put all the Lappet Bulung into the steamer, wait until the cake is cooked.
I steamed this cake for about 30 minutes, and Lappet Bulung was ready to eat.
Lappet Bulung is ready to be served and is more enjoyable to eat when it is warm.
