vegetarian kofta with vegetable curry with coconut milk.

Hello, friends vegan-lovers and community greetings. Today I would like to share a unique recipe that is mostly made on special days or festive times.
Vegetable koftas and curried vegetables with coconut milk.
this i made for one of my friend's family. They are going to shift to another town and she was very busy packing and transferring her belongings. She had no time to make food for her children so I thought it better to at least make one dinner for them.

ingredients for koftas :
2 cups of grated cabbage
2 cups of grated carrots
1 onion
2-3 cm ginger
1 green chili
1 tsp salt
1 tsp black pepper
1 tsp paprika powder
1 tsp garam masala /curry
1/2 tsp turmeric
2 cups of split black beans and chickpeas soaked.
2 tbsp cornstarch
oil to fry

In the mixer jar, add both dals (split and soaked Beans and chickpeas), green chili, and ginger, and blend into a coarse paste.

in a bowl mix cabbage, carrot, onion, and spices with the blended dal paste.

Mix thoroughly.

Add cornstarch.

Mix it into a dough and make lime-sized balls.

keep them aside.

Heat oil in a skillet.

And fry the koftas on medium heat until they turn crispy and brown.

Here they are ready when we make curry we add them to it but they can also be eat alone.

Now we make the vegetable curry.
Ingredients:

4 potatoes
3-4 cauliflower florets
1 yellow paprika
1/2 onion
2 carrots
2 broccoli florets
250 ml coconut milk
cashew paste made from 1/2 cup soaked cashew
2 spring onions
whole spices> 2 bay leaves, 2cm cinnamon, 2 cardamoms, 3 cloves,1 star anis.
1 tsp salt
1/2 tsp black pepper.
1 tsp coconut oil
1 tbsp ginger garlic paste

cut all vegetables in bite-sized pieces.

Make a paste from soaked cashews.

Warm a skillet add 1 tsp coconut oil.

Add whole spices to the oil. stir them until they release aroma.

Add spring onion and onion. stir for 1 minute.

Sir in the ginger garlic paste.

Add one by one all vegetables in the skillet and saute them for around 2-3 minutes

salt and pepper.

Potatoes.

1/2 tsp turmeric powder and 1 cup of water cover and cook until potatoes get softer.

After the potatoes are cooked add coconut milk.

Stir well.

Add cashew paste.

2 pinches of garam masala.

Mix well and cook for 3-4 minutes.

After the curry cools down add fried koftas just before serving
Enjoy with rice or bread.
I served it with rice but it was warm and my friend wanted to take it to her house so I kept koftas separately.
