Hello, friends, vegan lovers, and community, greetings today the Meatless Monday with simply vegetable spaghetti using tahini
When I start making food suddenly I change my mind and take a camera and start taking photos to share my recipe. It happened today I was chopping the vegetables and almost i finished chopping celery. And thought ohh I have to make a plant power post today.
I had already chopped 3 stalks of celery and the chopped onion was in the pan
1 aubergine
1 carrot
4 orange sweet paprika
1/2 bulb of garlic
1/2 green squash
few leaves from celery
1 ts dried thyme
1 ts dried basil
1 ts dried oregano
1 ts salt
1 ts paprika powder
1/2 ts black pepper
2 tbsp tahini/sesame paste
1/2 package of whole-grain spaghetti.
In a warm skillet add chopped onion
Then add 1 tbsp oil and stir it for 2 minutes
Add chopped garlic and stir it.
Add one by one chopped vegetables, carrots, celery, paprika, and celery leaves, and stir it for 2 minutes.
Add dried spices
vegetable bullion
salt, pepper, and chili saving 1/4 part of salt.
In the other skillet add 1 tbsp oil. Add chopped aubergine and squash fry them for 2 minutes.
Add saved salt to it and stir well.
Put them in the other vegetable mixture.
Add tahini paste to the mixture
Mix it well and cook for another 2 minutes.
Cook spaghetti in the salted water.
After the spaghetti is cooked drain the water and serve according to choice.
Garnish with some olives chopped tomatoes roasted pumpkin seeds.
It is a simple meatless Monday today.
