Hello friends and community! I was inspired to make these cookies after practicing Norwegian flatbreads (knekkebrød) with seeds for a vegan gluten-free keto diet. Recently, it was Navratri or Dashahara festival in India. During the Navratri festival, we were 100% vegetarian for 10-12 days, but most vegetarian days became vegan automatically. On some days, we ate very light food. On one of those days, I made some cookies without following any specific recipe. I just found the ingredients in the cupboards, fridge, and kitchen. And it is my Vegan gluten-free cookies.

Ingredients:
1/3 cup of almonds
1/3 cup of sesame seeds
1/3 cup of flaxseeds
1/3 cup of sunflower seeds
1/3 cup pumpkin seeds
1/3 cup of walnuts
1/3 cup of oatmeal
1 tsp ginger powder
1 tsp cinnamon powder
1/2 tsp baking powder.
1 cup blueberries fresh
1/3 cup of sugar
2 apples
1 pinch of salt
1 tsp coconut oil.
Start roasting nuts, almonds, and walnuts only for 2 minutes and remove them from a pan.
Then seeds pumpkin
Sunflower seeds
sesame seeds after 1-2 minutes remove and keep them aside.
In a mixer jar pour oatmeal
Flaxseeds, and grind them in fine powder.
Using mortar and pestle
Crush roasted walnuts and almonds.
We prepare all the seeds and nuts and mix them
After mixing them in A bowl add ginger powder, cinnamon powder, and baking powder.
Grind the sugar in powder( or use powder sugar) and blend it in the nuts and seeds mixture.
Add blueberries and mix them well. Add a pinch of salt.
Grate apples using a grater.
Drain the juice using a strainer.
Use a spoon to press out juice to get dry apple pulp.
Mix the apple pulp into the mixture. made of nuts, seeds, and berries.
Blend the powder of flaxseeds and oatmeal into the mixture. (flaxseeds and oatmeal work as a binder in cookie dough.)
Make a good mix and using your hands make a dough-like consistency.
This is our cookie dough.
Use 1/2 tsp coconut oil to grease the baking tray.
Make the walnut-sized balls from the cookie dough.
Shaped in cookie form.
Ready to go in the oven for bake.
Bake them in a preheated oven for around 30 to 35 minutes at 180 C.
Because apples and blueberries take a little more time than normal cookies.
Here they are tasty and healthy gluten-free cookies for enjoy with coffee or tea. or good for children's lunchboxes.
