There are many alternatives for dinner to avoid boredom. One of them is with corn ingredients.
Usually I cook for a more special dinner because dinner is like a more intimate time with family.
While for breakfast and lunch, I often cook together to save time and also because breakfast and lunch are close together.
For Indonesians, rice is our staple food but often rice actually causes excessive calories. That's why to start a diet, we here usually replace general rice with something else.
Since then I started a diet to lose weight after pregnancy, (and now my weight is normal). I got used to having many alternatives to rice.
I got used to not relying on rice anymore. I use many healthier alternatives such as sweet potato, pumpkin, taro / yams, cassava or corn like this one menu.
We can be more varied in serving dinner especially for those of us who like to explore new menus, or like to cook whatever is in the kitchen. Instead of serving rice, we can serve corn as a substitute.
I prefer to call this corn-based menu corn rice. In my opinion, besides its delicious taste, corn rice can also be a healthier choice for people who want to reduce their rice intake.
This time, I will serve corn rice with marinated tofu. You can replace tofu with other protein ingredients such as mushrooms or tempeh.
For vegetables, here I use white mustards or Chinese cabbage. You can also use general cabbage.
Since here, I present two types of dishes, then I will start several jobs at once to save time.
Marinated Tofu Ingredients
- 250 grams of tofu
- 3 cloves of garlic
- 2 tablespoons of sweet soy sauce
- 1 teaspoon of salt
- 1 teaspoon of coriander powder
- 1 teaspoon of pepper powder
- 1 cup of water
Corn Rice Ingredients
- 1 corn cob
- 100-150 grams of your favorite vegetables
- 5 small cloves of red onion, sliced
- 3 cloves of garlic, sliced
- 1/2 tsp of salt - 1/2 tsp of sugar
- 1/2 tsp of coriander powder
- 1/2 tsp of pepper powder

Serve corn rice with roasted tofu. ❤️ I also add sprinkle of sesame seeds and chili powder.
In fact, this recipe can be served for two servings. It is very filling for me.
