SUPERFOOD BANANA BREAD

Today I wanted to share my recipe for the most delicious, wholesome, moist and fruity banana bread you'll ever taste. I am a fan of turning what is normally considered "unhealthy" into foods that are nutritious but don't lose their incredible taste. This banana bread is one of those foods I've turned into something that doesn't compromise your heath and is edible for everyone (YES, even your picky little brother; trust me, been there done that).

Anyhow, here's the recipe:

INGREDIENTS:

3 super ripe bananas (the browner the better)
2 flax eggs (combine 1 tbsp of ground flax seeds with 3 tbsp of water for one "egg")
1/3 cup melted coconut oil (or olive oil)
4 tbsp agave syrup (or maple syrup, or any other liquid sweetener of choice. Alternatively, use dates to taste)
1 cup and 3/4 of flour (I use half a cup of oat flour, one quarter of almond flour and one quarter of buckwheat, but choose whatever flour you like best)
1 tbsp maca powder (yay to superfoods!)
Spices to taste: I use 1/2 tsp cinnamon, 1/8 tsp ginger, 1/8 tsp nutmeg, 1/8 tsp ground cloves)
1 tsp baking soda
pinch of salt

DIRECTIONS:

Preheat your oven to 180ºC or 325ºF. In a blender, stand mixer or food processor, mash the bananas and add the wet ingredients. Blend/pulse until well combined, make sure there are no lumps.

Add dry ingredients.

Pulse to combine.

Add mixture to an oiled mold or baking pan. Bake for one hour.

You can add whatever toppings you like: nuts, seeds, a sliced banana, coconut flakes, etc. The options are endless!

This banana bread is perfect for a laid-back breakfast or as a snack. I love pairing it with hazelnut butter and honey drizzled on top and a cup of coffee on the side. Yum.
