Colorful veggie dish with rice | Light & easy summer recipe

Hello, cooking fellows!

You have probably figured out from some of my previous recipes that when it’s hot outside, I do like to include more vegetable meals on our menu.
I have to confess that I often get inspired by the Chinese mindset because you know that for them “food is medicine, medicine is food”. They do use A LOT of veggies in their menu on a daily basis and they do have one of the longest lifespans worldwide. I believe consuming vegetables play a huge role in that.
I am a non-vitamin-supplements person and I believe that they should be coming from the food that you eat and not from the pills that you take. Therefore I try as much as I can to implement that mindset in my daily life and I try using more fruits and vegetables in all of the recipes that I prepare at home.

Today I will be sharing with you my own recipe for a colorful veggie bomb dish with rice that was inspired exactly by the Chinese cuisine. It is quite easy to prepare and you will be done in no time.

Here is a list with of the ingredients:

  • 2 red peppers
  • 1 eggplant
  • 4 carrots
  • 1 zucchini
  • Salt to taste
  • Pepper to taste
  • 250 gr white rice
  • Olive oil


Start with boiling the rice so it can be ready when you are done with the dish. Then peel the vegetables and cut them into pieces. You can choose the size depending on your preferences. I prefer to cut every vegetable into different shapes and sizes because this gives some color and visual diversity to your dish.



When you are done with cutting, put some olive oil in a frying pan, and pour the veggies mix inside. Fry them to medium temperature until they become soft but still a bit crunchy. Add salt and pepper to taste and remove from the oven.

For the presentation, I do like to go a bit “gourmet” with it so I took a bit of the rice, placed it into a small cup, and then placed the shaped rice into the plate. Then pour some of the steamed/fried vegetables on the side and add a few drops from the colorful olive oil for a final look.

This is not only a light meal option for all those extremely hot days but also very easy and fast recipe that you can prepare when you have unexpected guests at home. I guarantee that even those people who prefer eating meat will love it and you will end up taking the ovations of everyone!
