I'm not a person who really likes drinks with a high sweet taste, preferring coffee with milk, although sometimes sugar, palm or condense milk are added, usually in small amounts. Because I realized, I have the possibility to get diabetes, especially since my mother died of diabetes for 13 years.

So, I always come up with an alternative so that I can enjoy life by eating whatever I eat, but with good control. So, I like to make food or drink that I make myself at home, so, I know what is contained in the food or drink.

One simple example to enjoy food or drinks without worrying is to create contemporary food and drink ideas at home. I once enjoyed a cup of cold drink at one of the beverage outlets from Hong Kong one day. The country is famous for its worldwide food and drinks, one of which is bowl drinks filled with various toppings such as jelly, red beans, bubble, sticky rice and many more types. Drizzle with sweet syrup and fresh coconut milk.

One of my favorites at zeribowl outlet is red bean ice which is sweet, cold and fresh, perfect for eating on a hot day. I really like the menu, until I finally realized I had to control the drink like that. I finally made red bean ice at home, with lots of info and recipes that I got on the internet.

Red bean ice has unique characteristics, making it very easy as long as you know the right technique to make the red beans have a soft texture. So, this time I want you to know how to make red bean ice that is delicious and good for health.




Red Bean Ice Recipe



Ingredients:

  • 250 gr red beans
  • 100 gr palm sugar + 20 gr sugar
  • 65 ml thick coconut milk
  • 2 liters of water
  • Pandan leaves
  • Pinch of sugar
  • Ice Cube


How to make red bean ice:

  • Wash the red beans, then soak in warm water overnight. At this step, the red beans will expand and are easy to boil to have a soft texture.

  • After that, boil the red beans with 2 liters of water and pandan leaves for 1 hour or estimate the red beans according to the desired texture. You can use pressure to make the red beans soft quickly, but this will make the red beans crack and the shape of the red beans is not intact.

  • After the red beans are boiled, add palm sugar and sugar at the end of boiling. Mix until the boiling water shrinks, adjust to taste.

  • When finished, red beans can be stored in the refrigerator if not used. The longest storage in the chiller is 3 days and in the freezer for 1 month.

  • Combine pandan leaves, thick coconut milk and 200 ml of water into a boiling pot. Give a little salt so that there is a savory taste in the coconut milk. Cook until just warm. I'm afraid the coconut milk will break and become grainy.
