Coriander leaves, also known as cilantro, are the fresh, leafy part of the coriander plant (Coriandrum sativum). They are widely used in cooking for their fresh, citrusy, slightly peppery flavor. Common in dishes from Indian, Mexican, Middle Eastern, and Southeast Asian cuisines, coriander leaves are often added fresh to salads, salsas, curries, and soups. They are rich in antioxidants, vitamins A, C, and K, and can add both flavor and nutritional value to a variety of dishes. The leaves are generally used fresh, as they can lose flavor when cooked for long periods.
