Hello fellow foodies... Here to share a recipe of a quick and balanced breakfast that has me heading to work in time, filled and healthy.
Let's give it up for the breakfast of all time... PANCAKES 🥞
Learnt to make pancakes from my favourite teacher in secondary school ‘Ms Ronke’ She was an angel; so beautiful, elegant and caring. When I was in my second year at St. Kizito’s secondary school Lafia (a boarding house) I always fell ill like my body refused to acclimate to the environment even after spending more than a year there.
She came to Lafia to complete the compulsory service year for graduates in Nigeria and took a liking to me, stating that ‘I looked like her favourite cousin and what is more I bared the same name with her ‘. On one of such occasion I fell ill and instead of being sent home by the nurse. She asked that she takes me to a clinic close by and take care of me at her house at the copper’s lounge. And there my friend was where I learnt to make pancakes in different varieties. I loved them and still do till date.
From all the many varieties I will show you how I make the white pancake and the brown pancake which are both made up of just five ingredients with an almost balanced diet fill although without vegetables 🧅🥬(my sibling's preference).
White pancake recipe
100grams of plain flour
Baking margarine
4 tablespoons of sugar
30ml of liquid whole milk
Two large eggs
Half a glass of water
STEP ONE ( Mixing the dry and wet ingredients)
Mix the powdery things in a bowl first (The 100gram of plain flour and 4 tsp of sugar) then making a hole in the middle of the flour with the scooping spoon, pour in the half glass of water, two eggs and the 30ml of milk and stare till it blends and creates the texture below.
STEP TWO (frying the mixture)
Placing the the frying pan on the lit fire. Squeeze out a little quantity of cooking margarine and tilt the pan on all sides so it touches every pat of the pan. Next take a scoop of the mixture and pour into the pan. You can spread it out to make a thin batch.
When it is ready to turn over it looks almost dried up atop
In turning it, it's crusty and a bit hard.
In order to make so many batches for a family of five I used two pans on two different gas tops.
Here we have it. A breakfast in 10mins with just two steps.
Brown pancake recipe
100grams of plain flour
Baking margarine
3 tablespoons of sugar
Two sachets of choco powder
Two large eggs
A glass of water
For the brown pancake the only difference is the choco powder will be mixed with the plain flour and sugar followed by the liquids.
Following the same steps as above. The beautiful brown batch of pancakes is the result. It's taste- yummy.
For me the choco brown pancakes are my favourite as the give you the sensation of sweet savoury taste that can only be gotten when you close your eyes while chewing😅
