Boiled Chicken in natural Herbs and spices.

This simple yet delicious soup is cooked with natural herbs and spices. Making these dish is pretty straightforward. It doesn’t even include cooking oil. To make this soup, You just simply put all the ingredients together except vegetables, it will be added later, wait for it to boil and cook. The mild satisfying flavor of this broth is so good. It will fill your kitchen with a delicious smell.

Ingredients

For the Broth :

Whole chicken, in medium pieces
Ginger, crushed
Bay leaves
Pandan leaves
Onion, quartered
Garlic cloves
Black peppercorn, whole
Fish sauce, 3 Tbsp
Celery stick, bashed
Water or rice water
Ground black pepper
Salt

Vegetables :

Potatoes, quartered
Green beans
Cabbage, quartered
Moringa leaves or Pak choi
Chili, optional

Preparations

  1. Make a Broth by combining all the ingredients listed, retain the fish sauce, ground pepper and salt for later. Remove the scum that floats on the surface.

  2. Cover with lid, Let it boil then reduce the heat to medium low and cook for 30 minutes.

  3. Add the potatoes, green beans, cabbage, chili and fish sauce. Cook until tender. Add additional water if necessary.

  4. Adjust the seasoning by adding a dash of salt and
    ground black pepper.

  5. Add the Moringa leaves and turn off the heat.
