How about a quick and easy beet salad for lunch? A tasty way to eat more veggies!
For the basics, all you need is:
- Cooked beets in cubes
- Cooked and cooled chickpeas (or easy peasy: canned)
- Spinach
And a quick dressing of:
- (Plant based) yoghurt
- Vinegar (I prefer balsamic)
- Olive oil
- Herbs like chives or tarragon
Add some seeds and/or nuts for a nice bite!
Just throw it all together and mix it up. Play with the amount of chickpeas and/or nuts based on how hungry you are.
