My sweet tooth was aching (again), and decided to make a crowd favourite (the kids here absolutely love it!).
Along with puff-puff, this Nigerian snack is very popular and is an integral part of my childhood.
Without further ado...
- 300g all-purpose flour
- 100g sugar
- 75g butter
- 1-2 tablespoons powdered milk
- nutmeg, grated (for that extra kick)
- half a tablespoon of baking powder
- vegetable oil for deep frying (you can use other types of oil, but I've only ever used vegetable oil.)
This recipe makes roughly 8 buns.
Combine flour, sugar, baking powder, nutmeg and milk (I forgot to add the milk at this stage 🙊)
Add butter and combine (using washed hands) with dry ingredients to form crumb-like consistency
I remembered the milk and added it at this point
Add warm water bit by bit, combining with your flour mix
Aim for a slightly sticky dough. Do not knead or overmix for best results

Pour your oil into a pot, adding enough to ensure the batter is at least 3/4 immersed in oil during frying
bring your oil to high heat (this prevents your buns from sitting in the oil too long
Deep fry till golden brown, turning occasionally

And there you have it!
Hard on the outside, soft and yummy on the inside, full of flavour. To be enjoyed while warm. Some people fuss over getting the perfect shape while making buns. I prefer that irregular shape, because it adds 'character' to the buns 😄.
One thing is for sure though. These buns didn't last long 😂😂😂.
