Smash Burger Recipe By @jtorresost | Business & Lifestyle Pillar | One Strong Community Program Internship 2023

Hello there! I'm @jtorresost, and I'm excited to share with you one of my favorite recipes from my four years at Chicopee Comprehensive High School's CTE Program in Culinary. Today, we'll be making discussing how I made a Smash Burger with a Japanese Milk Bread Hokkaido burger buns, making it the most complex thing I've ever made in culinary.

Let's get started with the 13 ingredients needed for this burger:

  • 4oz Double patty Smash Burgers.
  • Tangzhong:
  • 2 Tbsp (20g) Bread Flour
  • 2 Tbsp (27g) Water
  • 4 Tbsp (60g) Whole Milk
  • Bread Dough:
  • 2.5 cups (320g) More Bread Flour
  • 1 Tbsp (9g) Active or Instant Dry Yeast
  • 3/4 tsp (3g) Fine Sea Salt
  • 1/2 cup (120g) Whole Milk
  • 1/4 cup (56g) Granulated Sugar
  • 3 Tbsp (42g) Unsalted Butter, Softened
  • 1 Whole Egg, Room Temp.
  • An Egg Wash
  • Garlic Butter

To properly measure these ingredients, all you need is a weighted scale and a grocery store around your corner.

Now, let's move on to the 17 steps to create this delicious burger:

Tangzhong:

  • Add all the ingredients together over medium heat and whisk until it becomes a paste.
  • Once thick, remove from heat and let it cool to room temperature.
  • Set aside.
  • Bread Dough:

In a stand mixer bowl, add the dry ingredients.

  • Add in the milk and yeast mixture, the tangzhong mix, and a whole egg.
  • Mix on low speed, scraping the sides occasionally.
  • When the dough starts coming together, increase the speed to medium-low.
  • Gradually add butter until incorporated and nothing sticks to the sides. This will take about 5-7 minutes.
  • Dump the dough onto a work surface and roll it into a tight ball.
  • Place the dough into a lightly greased bowl and cover with a damp towel.
  • Let it rise at room temperature for 1-2 hours, or until it has doubled in size.
  • Punch the dough down and dump it onto a lightly floured work surface, and divide it into 9 equal pieces (75 g each).
  • Lightly grease a 9x9 inch baking dish, roll the dough pieces into small fight bas, and place them into the baking dish in rows of three.
  • Cover with a damp towel and let it proof for 1-2 hours.
  • Brush with egg wash (egg beaten together with a splash of whole milk).
  • Bake in a preheated oven set to 350F for 28-30 minutes.
  • For the garlic butter, finely chop garlic and add it to a cold pan with unsalted butter.
  • Heat over medium heat.
  • Seal the garlic for 30 seconds and immediately remove the butter.

Remove the buns from the oven and immediately brush them with garlic butter and flaky salt to end.
The end result is a texture unlike any ordinary store-bought bread, and there are many reasons for that.

Reason 1.Unlike your store bread You know exactly what is in your bread as you baked it
Reason 2. This bread will be worth yours time
Reason 3. Your bread you can make for your self and not have to buy bread anymore just simple keep this recipe go about your day with your own bread.
