Quick corn fritters

When you want to prepare something quick and simple, the ideal solution could be corn fritters. This evening my kids wanted to eat them because my mom, their grandmother, made delicious apricot jam that we wanted to try. Since we often make crepes, this time we chose fritters.

For these quick fritters, you first need to prepare a cup of corn flour and a cup of wheat flour.

We will also need two eggs, milk, water, two tablespoons of oatmeal, baking powder, a pinch of salt and sugar, and oil for frying.

Start whipping the eggs.

Add corn and wheat flour and two tablespoons of oatmeal.

Then add a pinch of salt and sugar and a little water.

And finally milk. I always prepare two tablespoons of flour, to begin with, but later I add more until I reach the required thickness of the mixture. You can add as much milk and flour as you want, depending on how much mixture you want. The mixture should be thicker than the crepe mixture and should look like this.

In the end, add a little baking powder and mix with a spoon.

Heat the oil for frying. Take out the fritters with a spoon and fry them very briefly, half a minute on one side and half a minute on the other side.

Place the fritters on a paper towel to drain the oil. You can coat fritters with sour cream, cheese spread, or any salty filling.

But I prefer sweet fritters. This time we spread them with my favorite combination of sour cream and apricot jam that my mom made. We ate them very quickly as always. 😊
