Summer's Strange Kitchen - Infinite Options Air-Fryer Veggie & Cheese Muffins

Good Morning and happy Wednesday!

I haven't posted on here in a while...life events and things tend to distract me from routine quite easily.

Instead of getting stuck stumbling clumsily over the keyboard, trying to find some reason to explain why I created this recipe... let's just jump right in and get to it.

Recipe & Method

Ingredients

  • About 2 Cups of mixed vegetables of choice (I mostly had onions and peppers)
  • 1 1/2 Cups Flour
  • 1Teaspoon Sugar
  • 1 Teaspoon Dried basil
  • 1/2 Teaspoon Origanum
  • 1/2 Teaspoon Garlic flakes
  • 1 Teaspoon BBQ Spice (Alternative: Paprika)
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 100g White Cheddar
  • 1/2 Ring Feta Cheese
  • 1/2 Cup Coconut Oil
  • 2 Large Eggs
  • 1/4 Cup Milk

Method

-Roast Vegetables in air fryer, set aside to cool before using stick blender

-Add Flour, Sugar, Herbs, Spice and Baking- Soda and -powder together, whisk to combine.

-In separate large bowl, whisk together Eggs, Oil and Vegetables

-Add Cheese and Feta

-Add Dry ingredients, mix till just combined.

-Bake in air fryer at 150C/300F for 20-25 Minutes

-Done! Due to always running out of baking cups at annoying times, I stopped buying them ages ago. A piece of tinfoil and the back of a glass works just as well most of the time.

Well, that's it!
Easy enough for lazy days and a decent way to get fussy toddlers to eat some veggies.
