It's been long since I last wrote on my blog...one month already!
Taking care of 2 small kids is not easy and really take a lot of time daily - I have to prepare their food, get them ready...play with them...make them sleep and so on...Quickly you see the time is running!
But today I am happy to get some free time and share a dish that I prepared for lunch today with you all!
I hope I will get much more free time so that I can post more often! Fingers Crossed!
For lunch today, I made a delicious Cheezy Mac n Beef with Potato and Eggplant, and what is great is that this recipe is quite easy to make...
Check out how I did it...I will explain the recipe briefly as you can add or change the ingredients depending what you have on hands!
Ingredients you will need:
- Minced beef cooked like a bolognaise
- Boiled Macaroni pasta
- Eggplants - cut in round and fried semi-cooked
- Potatoes - cut in round and fried semi-cooked
- Béchamel sauce
- Mozzarella Cheese
In a baking tray, spread some beef bolognaise at the bottom and put a layer of semi-cooked potatoes...
Then cover with beef bolognaise sauce...
Then place the fried eggplant and once again put a layer of beef bolognaise as you can see below...
Lastly put on the cooked macaroni pasta, add some more beef bolognaise, grated Mozzarella cheese and béchamel sauce...
Place in the oven...
Let your gratin cook until the cheese is of a nice golden brown color...
I baked it for 20 minutes at around 175 degrees Celsius!
After the baking time, let it sit for 10 minutes before you can cut and serve...
This was our lunch today and everyone loved it...
The kids favorite...
Whenever I cook something Italian...be it pizza or pasta, the kids just love it so much!
