I want to share to you all a new blog series I am starting that's solely dedicated to food. My name is Apple and this is the An Apple Eats blog series.
In this first blog of the series, I will be sharing my meal prep. This was a few months back but let me name it as week1. Quick description of what meal prepping means here.
As a lazy person, even though I like to cook, I usually prefer quick and easy meals on normal days. I don't mind having the same food every meal for a few days as long as I am well fed.
Some years ago, I started watching asmr cooking and baking videos on youtube. And by some random video recommendation, I discovered the concept of meal prepping. Since then I've watched a lot of meal prepping videos from vegetarian/vegan, to low carb, to whole grain, and many more.
So in this blog let me share with you this meal prep I did earlier this year.
This was a bit of an easy meal prep for me as I've had this multiple times already. Here is what I made.
Menu:
- Lettuce - washed of course
- Brown rice - cooked according to instructions in label
- Hard-boiled eggs - boiled for 10mins and cold-bath right after
- Boiled brocoli
- Cucumber - washed
- Mini tomatoes - washed
- Pan-fried potatoes and carrots - seasoned with salt and pepper and cooked until potatoes are soft
- Pan-fried salmon - cooked for a few minutes on each side. No seasoning added as it's flavorful as it is
- Extra overnight oats for the next morning - 5tbsp oats, 1tbsp chia seeds. Next morning added 2tbsp of protein powder for flavor right before eating
These lasted for about 3-4 days. I store each separately so I can just mix anything I feel like eating with it. For example, in the next day I had this lunch below. I had cucumber, lettuce, and reheated brown rice, potatoes & carrots. But I wanted to add a bit more protein into my meal so I opened a can of chickpeas and added it. I also made a salad dressing using protein yogurt, cajun seasoning, and honey. And within a few minutes I was able to make this meal.
