Fresh Mackerel Red Chili

Ingredients:





  1. 6 fresh mackerel , cleaned and scraped on the sides
  2. 10 large red chili peppers, seeds removed
  3. 7 red chili peppers (to taste)
  4. 4 cloves of shallots
  5. 2 cloves of garlic
  6. 1 red tomato, cut into small pieces
  7. 1 teaspoon sugar
  8. 1 teaspoon salt
  9. 1 tablespoon lime juice
  10. Cooking oil to taste
  11. Water to taste
  12. 1 teaspoon garlic powder
  13. 1/2 teaspoon turmeric powder

How to cook:

1. Mackerel Preparation











  • Wash the mackerel thoroughly, then coat it with lime juice and a pinch of salt to remove the fishy odor. Add garlic powder and turmeric powder, mix well and let it sit for 10-15 minutes.
  • After that, fry the mackerel until cooked and golden in color. Remove and drain.

2. Make Red Chili Sambal







  • Puree chili, shallots and garlic using a blender or mortar according to the desired chili sauce texture.
  • Cut the tomatoes into small pieces

3. Stir-fry the Sambal






  • Heat some oil in a wok. Sauté the chili sauce that has been mashed until fragrant.
    -Add the tomato pieces, stir until the tomatoes wilt.
  • Add salt and sugar to taste, mix well. If the sambal is too dry, add a little water to get the desired consistency.
  • Cook the sambal until it is done and the oil starts to come out of the marinade.

4. Serving





  • Once the chili sauce is cooked, add the mackerel that has been fried into the chili sauce. Turn the fish so that the marinade is fully absorbed into the fish meat.
  • Cook for 3-5 minutes until the fish is fully incorporated with the sambal.

5. Serving






  • Serve the mackerel with red chili sauce on a serving plate. This dish is best served with warm rice and fresh vegetables such as cucumber, basil leaves, and eggplant.

  • For more savory results, use really fresh mackerel. Besides tasting better, fresh fish also has a softer meat texture.
