@JustinParke here once again with a delicious #plantbased recipe curation. With this weekly curation I do my best to pull together a collection of the finest vegan recipes from our community and beyond.
I am truly inspired each week when I see all the beautiful culinary creations you lovely Hivers from all over the world prepare. You all never cease to amaze me, and also make me truly hungry.
This may be my first cookie-less curation, but I still found some awesome gems. First up are two awesome and healthy soups from @plantstoplanks and @okann, the winner of the week's 5% beneficiary. If you're looking for something on the heartier side, @marinast has you taken care of with her "perfect" vegan chili.
A recent abundance of sweet potatoes caused @sreypov to batter and fry them with a sesame twist. And if you're in a hurry, but want something delicious, @sherylneil's pasta dish is right up your alley.
I saw @carolynstahl's tempting fried rice appear while I was halfway through this curation, and it made me realize how long it's been since I've seen broccoli. Last but not least is a new-to-me Hive chef, @alexrohr with an awesome fruit salad, containing raspberries, something else I haven't seen in a long time.
A side note - you may have noticed that we've moved from @lotusshares to @naturalmedicine, and Plant Based will be replacing Earth Healing. 👜 Wonderbag Soup ♨️
I only recently became aware of the Wonderbag cooking "bag" from a South African hiver, and it reminded me very much of a Crock-Pot, something few American households are without. If you haven't heard of either one, slow-cooking is the purpose of each of these devices.
This soup's flavors nicely melded after many hours in the Wonderbag, and it's full of many in-season local vegetables, how can you beat that? This soup will certainly keep your immune system in tip-top shape, as it's full of ginger, turmeric and peppers.
👩🍳 Soup For The Soul 🍠
Sweet potato soup is for the soul, there is really nothing more soul-foody that the humble sweet potato. It is perfectly suited for spicy curries and simple purees, and is quite affordable all over the world.
@okann is quickly becoming a fixture in our community, and this sweet potato soup looks like the perfect remedy for a cold and rainy day. This chef also gives some tips on how to prepare this soup in a spicier format, if that is your sort of thing.
🤠 Hipster Cowboy's Stew 🍲
American cuisine is not usually one to drool over, especially where #plantbased dishes are concerned, but Tex-Mex cuisine is very delicious, and works with a lot of flavors. Chili is a quintessential Tex-Mex dish, and is cooked a bit differently from house to house and state to state.
This chili from @marinast is a departure from the classic, but even the pickiest of cowboys are hip to avocadoes nowadays. If you read this post there's a funny story within too, much more than a recipe.
🍠 Sweet Potatoes Everywhere 🍠
Already back to sweet potatoes again, but didn't I say they were cheap and affordable all over the world? In Suriname there are very few chances to buy produce from the grower, but @sreypov found a sweet potato grower/seller in her new neighborhood, and wanted to support local farmers.
She bought a bag and went home to fry sweet potatoes in the Cambodian style, making her feel a bit nostalgic. A little batter and some sesame seeds give these fried snacks a cool texture and a tasty flavor boost. When is it ever wrong to use sesame seeds in anything though?
🏃♀️ Fast But Delicious 🍝
Fast food doesn't have to mean not delicious, and @sherylneil gives us proof of that. I also am a chef not afraid to mix pasta with tofu, and I've had quite delicious results. This dish would be a nice light lunch on a hot day.
Frying tofu before use always gives it a better flavor, texture and makes the dish you use it in that extra bit special. As we all pressed for time these days due to this global economic downturn, it's important to know how to whip up a delicious and simple meal in a flash.
😋 Tempted By Tempeh 🍽️
I was just looking at a post from our fearless leader @riverflows the other day, where she made us of kalonji, a little cumin-esque black seed that has an incredible flavor. I use it in many of my Indian and Caribbean inspired dishes.
Tempeh is one of my favorite protein sources, and combining this with one of my favorite seed spices is a sure winner. With memories of Thailand in her mind, she thoughtfully prepared this lovely dish for us all. As she says in her post, fried rice is a great breakfast food, and I couldn't agree more with that.
🍌 Something Fresh 🥝
This fruit salad makes me wonder if @alexrohr was intentionally trying to prepare a fruit salad with all the fruits I have no access to, except bananas, of course. My family was able to enjoy raspberries during our brief stint in Ecuador, and they are likely to never forget this tiny little fruit.
Oh how I love a fruit salad, and this one really gets my taste buds going. I am glad to have discovered this chef, and will be to sure to follow this Hiver for future #plantbased recipes. Raspberries are just too beautiful and photogenic.
