When I cook supper, I typically cook enough for us to eat lunch the following day. I consider it a mom hack: instead of having to figure out three meals a day, I only have to think up two and reheat one.
Occasionally, suppers will run on the smaller side or they'll be so tasty everyone overeats and then there is nothing left over for the following day. On one such afternoon, I was left staring into the fridge and pantry and both were looking like an abyss. Thankfully, Matt's prepper tendencies have lead him to discover some delicious shelf stable food and at the Dollarstore no less. He stocked up some canned ham from Denmark for only $3 CAD. Not only is it an easy recipe but at only $3 for the main ingredient it is also affordable. Snacky lunch to the rescue!
Here's what I came up with:
1 340g Canned ham, cubed
1 Apple, diced
3 Celery ribs, diced
3 Green onions, diced
1/2 Cup Mayonnaise
1 tsp Dijon mustard (2 tsp if you enjoy a bit of spice)
Salt and pepper to taste
Mix all ingredients together. Serve by itself, on crackers, or cucumber slices. We had ours with a side of vegetables.
The sweet apple is a nice compliment to the ham and I always enjoy the extra crunch of celery. It's a simple and satisfying meal and especially nice for those hot days when you're trying to keep the house cool by leaving the stove off.
