Hello my fellow foodies, it's the 10th day of the #Aprilinleo challenge, and it is getting very interesting as the day goes by. So for today, we're talking about all things:

Recipes, Family Dishes, and Dining Out.

Recipes are either capable of making or destroying a dish. Not getting a recipe right can wreck havoc if not managed well when preparing a dish.

Although in this part of the world where I come from, we don't stick to measurements in a recipe, we just add the ingredients as the spirit leads 😃, and most times if not all the time, as long as you can make the dish, it comes out well.

The only time we Nigerians actually follow the measurements in a recipe is when it has to do with baking and making pastries, that's the only time I've noticed that we stick to the correct measurements in the recipe.

So sometime in 2020 I had the opportunity to go to a mini culinary school, and the experience was a pleasant one, I had the opportunity to meet others who were passionate about the art of food making, and I also got exposed to some foreign or rather continental dishes, it was really an awesome experience.

We made several dishes that I wasn't familiar with, first on the list was the infamous 'Spaghetti Bolognese'. I was just familiar with either making a jellof spaghetti or boiling it white and making a tomato sauce to go with it. Until I came across the Spaghetti Bolognese, so basically it's white boiled spaghetti then with the Bolognese sauce. So apparently the Bolognese sauce is more or less a tomato sauce with a twist.

So the sauce is made with tomatoes, ground/minced meat, it could be beef or pork, or any meat of your choice, with some amount of carrots, celery, and some other spices. In the end, some amount of parmesan cheese or milk is added to it, to give it a creamy feel, and also to neutralize the acidity of the tomatoes. Voila, you have your Spaghetti Bolognese ready.

Ingredients
1 tsp of olive oil
2 medium size onions
2 carrots
2 celery sticks
2 cloves of garlic
Some Basil leaves
Oregano spice
Some Plum tomatoes
Some minced/ground meat
Parmesan cheese
Red wine
A pack of spaghetti

We didn't leave out the soups, we learned how to make the cream of onion soup, it wasn't really difficult to make, although it sounds far-fetched. Here in Nigeria what is referred to as soups, are definitely not what soups are in other parts of the world. So the ingredients for the cream of onion soup include:

Ingredients
A big bulb of Sweet onion
3 sticks of Celery
Half a cup of Flour
Half a cup of Broth
Half a cup of Cream
A slice of Butter and
A tsp of Thyme

Here's how it is being made, the onion is cut into some chunks, the celery is also cut, and the butter is added to the pan and set on low heat, the onion and celery are then added and left to caramelize. The flour and thyme are then added and left to boil, before adding the remaining ingredients. After boiling for a while, the mixture is then pureed using a blender, a little season is added if need be, and viola your cream of onion soup is ready to serve.
