Why not try making this easy beetroot and goat's cheese terrine?
I think it even qualifies as keto!
Process:
Slice the beetroot.
Roast it in the oven with a bit of seasoning and olive oil.
Cool down.
Take some cream goat's cheese and layer the 'cake'.
It's a lovely summer snack :-)
