Healthy Lunchtime Snack

Enjoyed creating this quick salad for lunch today.

Bought a readymade salad mix with red onions, lettuce, tomatoes, cucumber and white onions.

Popped some olive oil in a pan and quickly stirfried for approximately 5 minutes.

Added ground pepper and coarse ground sea salt.

Separated some florets of cauliflower and broccoli into bite sized pieces and blanched them in salted boiling water, for a few minutes.

Added them to salad with some black olives for that Mediterranean feel.

Lastly clumps of tuna for the protein addition.

Served with wholewheat seed bread and olive oil and Garlic dressing.
