Dear fruit lovers, summer is in full swing, we can afford to eat various fruits raw or to prepare various desserts and cakes from various seasonal fruits.
Juicy, fresh and full of sweetness that wins with every bite, irresistible strawberries, raspberries, peaches and apricots, this fruit as well as various delicacies from this fruit are special and delicious specialties.
You can prepare a fruit cake as a simple treat like a quick dessert. You can combine fruits according to your own wishes and taste.
One of my favorite fruits are apricots, this time I prepared a creamy refreshing fruit cake with apricots.
INGREDIENTS:
- 1 liter of milk
- 3 vanilla puddings
- six tablespoons of sugar
- 200 ml sweet sour cream
- 125 g butter
- 50 g of powdered sugar
- a pound of apricots
- 2 packets of biscuits
- a little milk or apricot juice to dip the biscuit (as needed)
PREPARATION:
From a liter of milk, separate 10 tablespoons from the side and put the remaining milk on the fire to boil.
In a separate bowl, add the pudding powder, sugar and milk that we separated and mix to get a liquid mass.
When the milk boils, add the liquid mass you have prepared and stirring constantly until the mass becomes thick.
We will transfer the finished cream to another bowl, cover it with a transparent foil and put it in the fridge to cool well.
While the cream is cooling, cut the fruit into the desired pieces.
Mix the butter that should be at room temperature with the sugar, then add the cold cream.
Mix the cream well with the butter and sugar to combine everything.
When everything is nicely combined, we especially mix the sweet sour cream and add it to the cream.
Well, make everything well with a mixer to combine and the filling is ready. You will get a fine creamy cream.
Then, in the mold you want, put only a few drops of oil and coat the mold so that the biscuits do not stick. Dip each biscuit in milk and arrange in the prepared mold.
Then put half of the cream over the biscuit and spread it evenly.
Then add chopped apricots, or fruit as desired.
Then add the other part of the filling over the apricots, which you will distribute evenly.
Put the finished cake in the fridge for a couple of hours.
When the cake has cooled well, remove the hoop from the mold and decorate as desired, I used whipped cream for decoration.
Fruit in itself is refreshing and a real summer treat full of vitamins, if you want to make something delicious and beautiful from the gifts of nature, fruit cakes are a real summer refreshment.
