Klepon Cookies (Coconut Pandan Cookies)

Good Frosty Morning!

Since yesterday we have been having frosty ground, frosty car windows, and frosty roof as well 😁 Won't be long til Frost The Snowman comes to visit 😁

My 2 cats just walked into the room. They've been craving for attention a lot, especially Furball. The twice missing cat 😅 He's been so vocal as we are keeping an eye on him extra crazy, so he won't escape 😅 He's not happy, so he's really meowing much, and won't leave me alone. In the end, Charley, his sibling, has been following me around as well, even to the loo 😅😅😅😅

For today's cookies. It is basing on Klepon (glutinous cake balls from Indonesia, that is flavored and colored with Pandan - screwpine fragrant leaf, filled with palm sugar, and rolled in salted steamed grated coconut).

2.5 c strong baker's flour
1 tsp BSoda
1/2 tsp salt
2 eggs
1/2 c sugar
1 c peanut oil
1 tsp pandan paste
Demerara style brown sugar, for filling
1/4 c unsweetened desiccated coconut
A pinch of salt

Preheat your oven to 350 F

Mix flour, soda, and salt in a bowl.

In a separate bowl, cream sugar, eggs, paste, and oil.

Mix in dry ingredients until completely combined.

Spoon 1 tbsp of dough, flatten and fill center with demerara brown sugar, then shape into rounds.

Mix coconut with salt.

Roll cookie balls on coconut, place on ungreased cookie sheet, and flatten slightly.

Bake for 8-10 mins, cool on rack before storing.

So fragrant, so good 😍
