Mom did as a child for the holidays. What kind of our mothers were good fellows! And buns, and cream is better done in advance - the cream should be cold, from the refrigerator. And it is better to fill in an hour or two before the arrival of guests.
Brewed dough
1 glass of water (250 ml)
100 g of margarine or butter
1/2 tsp. salt
1 cup of flour (150g)
4 eggs
Custard
200 g of butter
1 egg
1/2 cup sugar
1/2 cup of milk
Dough
Brewed dough: Put a piece of butter and salt in a pot of water. Boil. Remove the pan from the fire. Add flour and mix well. The dough should be blind in the shape of a ball. Slightly cool and hammer eggs one by one until a soft, homogeneous dough turns out.
Neck
Put some of the dough into a culinary bag or a plastic bag with a cut off corner and squeeze the swans' neck out of the dough on a baking sheet. Cover the pan with baking paper or grease. Neck to draw thin, in the shape of an English letter S. At the end, press the tip of the bag into the dough, so that the head is slightly thicker. Bake in preheated to 200 C oven for about 10 minutes, until golden brown. In total, make about 15 necks (sometimes they break) in size 6-7 cm.
Buns
With a teaspoon, put the rest of the dough on a greased baking tray, put in an oven and bake for 20-25 minutes at 220 ° C. Do not open the oven. Buns should dry and not be wet inside, otherwise they will settle. Take one for sample, make an incision. If the inside is still slightly moist, turn off the oven and let them stand-dry for 10-15 minutes.
Cream
Cream: Rub sugar with egg. Mix the mixture with milk and put on a small fire. Bring to a boil, stirring constantly. Remove from heat and cool. Beat the mixer with butter, add the sweet mixture slightly, whilst continuing to beat the cream. Remove the cream in the refrigerator until completely cooled.
Assembly
Cut the top of the bun, fill the cavity with cream. Cut the top of the cut into two pieces and insert as wings. Insert the head. Clean in the refrigerator before serving.
