Vegetable Breyani - Home Style Cooking

Hello Everyone! 


For my very first post I would like to teach you guys a typical veg meal that we as a family have during our fasts. I guess most of you guys must have heard of The famous indian dish "Breyani" and all indian chefs have their little own spin on the recipe , I would like to introduce you guys to our home recipe which easy to cook and delicious to eat. So with out any further ado, lets getting cooking:)

Vegetable Breyani


You will need: 

Ingredients: 

2 cups fresh or frozen mixed vegetables 

Mint Thyme 


Whole breyani mix spice 

  

Coriander 2 tablespoon mixed masala 1/4 tsp tumeric powder 1 tsp ginger and garlic 

1/4 cup biryani dhall 

4 Potatoes 

2 onions 

Salt according to taste 

Egg yellow  food coloring

2 cups rice 

Magarine  or butter 

Method :

Put rice and breyani dhall to boil. Add tumeric powder and salt to rice. Strain rice once boiled and keep aside. 


Marinate potatoes with fine salt and egg yellow. 

Fry potatoes in hot oil and keep aside. 

Saute half an onion and breyani spice in 3 tablespoons oil. Once onions is golden brown, add ginger and garlic and masala, then stir.

 


Add the mixed vegetables and tomato to the masala. Put in your thyme and mint. Add salt to taste. Stir well. Let vegetables cook for 20 to 25 minutes. When vegetables are cooked, put in the fried potatoes and stir. 

Remove from stove. Layer the rice and vegetables and then mix together. Fry remainder onions in butter till golden brown in colour and pour over breyani. Put breyani in pre-heated oven for 15 minutes to steam. 

Remove from oven. Garnish with coriander. Breyani is now ready to eat. Serve with dhall and salad.
