Hello, my fellow Steemians! Today I'm feeling like making a big slow cooker full of shredded chicken. This chicken is very versatile so you can make anything with it. I'm going to make the chicken and suggest some ways you can serve it. I'll be making taco's, a quesadilla, and even a bbq chicken sandwich. You can also make a great chicken taco salad. This recipe calls for just a few ingredients and a slow and low cooking time, so you can just throw it all together before you go to work and when you get back you will have a crockpot of goodness ready when you get home.
Ingredients:
2 lbs boneless, skinless chicken breasts
2 jars of your favorite salsa
1/2 cup chicken broth
minced garlic to taste
1 teaspoon of chili powder
1 teaspoon of salt
1 teaspoons of pepper
Pour 1 jar of salsa on bottom of the crockpot and spread to cover. Place chicken on top of salsa and pour rest of ingredients into the crockpot. Mix well and cover. Set crockpot on the low setting and cook for 7 to 8 hours.
Take chicken out and set aside for 5 minutes to cool and put in a bowl. With two forks shred chicken. Return chicken to sauce and continue cooking for twenty minutes. remove chicken with a slotted spoon and transfer to a bowl. This way you can add as much or little additional sauce you want. Squeeze the juice of a lime over finished chicken.
To make a quesadilla, heat up a griddle or frying pan on medium-high heat. Add oil and place tortilla flat in the pan and add a little bit of chicken mixture and some cheese. fold tortilla over on itself. Cook until golden brown on both sides. Serve with some sour cream or guacamole.
For the taco's take a taco shell and add a little lettuce to the bottom. Add meat and cheese and whatever toppings you want. Now for the bbq sandwich just add some of your favorite bbq sauce to the chicken and mix and serve on a bun. Alright well, that's all I've got for today. Let me know how you enjoyed the chicken.
