Hi all, today I would like to share a spicy, sweet & sour 3 treasures recipe. This is a famous pickle in Malaysian recipe.
∼∼ Spicy Sweet & Sour 3 Treasures ∼∼
Ingredients
Cucumber ∼ 1kg
Red carrot ∼ 600g
Pineapple ∼ 300g
Big red chilli ∼ 3 pieces
Chilli padi ∼ as desired
Vinegar ∼ 200ml
Salted plum powder ∼ 3 tablespoons
Salt ∼ 1 tablespoon
White sugar ∼ 200g
Methods
Firstly, wash the cucumbers thoroughly with clean water. Use a knife to cut from the both ends of the cucumbers, stem and blossom ends about half an inch. Then put the cut pieces back on the cucumber to rub it for 30 minutes or longer to remove the bitterness from cucumber.
Use a peeler to semi-peel about 80% of the cucumber skin, left a bit skin unpeeled so that the food looks more colourful. You may choose to peel off all the skin if you want.
Use a knife halve the cucumber from middle, remove the seeds at the middle by using a metal spoon. Then cut the cucumber into 2 inches long strips.
Wash the red carrot, peel off the skin using a peeler. Cut the carrots into a Julianne, thin strips that resemble and slice it crosswise into pieces about 2 inches long.
Remember to buy a sweet pineapple. Cut away the outer peel of the pineapple. Then cut it into small pieces.
Wash the big red chilli, use a sharp knife to slice it into 2 halves. Scrape off the seeds and it's pith by using the knife edge or a metal spoon. Then slice it lengthways into thin shreds.
Put all the cucumbers, carrots, big chillies, salt and some water into a big deep pan. The water level must be enough to cover all the cucumbers and carrots. Mixed well and put aside for 10-15 minutes. Drain it after that.
Add the vinegar, sugar and salted plum powder into the big pan, mixed well with the cucumbers and carrots. Mixed half a cup of water, no need to add too much water since the excess water may come out from cucumbers and carrots while marination. The quantity of sugar and vinegar can be adjusted depends on personal taste.
Add some chilli padi that suit your taste. The quantity depends on personal taste too. If like spicy foods may add more chilli padi. Just simply press with metal spoon and mix well.
Put the pan of cucumber and carrots into the refrigerator and marinate it at least for 3 hours and above. Marinate it in refrigerator over nite for better taste.
After marination, take it out from refrigerator and add in some pineapples. Then the food is ready to serve now.
You may keep the balance of unfinished marinated cucumber carrot in refrigerator for a week.
