I started to fast since the 19th February and eating only vegan until the 7th of April. Therefore I try out some new things to me and today I would like to present you the vegetable strudel. 😁
Let's get started. The used ingredients:
vegetable strudel
- 100 g cauliflower
- 100 g broccoli
- 200 g mushrooms
- 100 g carrots
- 1 onion
- 250 g spelt flour
- 1/2 l water
- 50 g cashew
- 50 g water
- 3 tablespoons olive oil
- nutmeg
- pepper
- salt
Sauce
- some parsley
- some dill
- 100 g cashew
- 100 g water
- 1 tablespoon mustard
- 2 tablespoons olive oil
- salt
- pepper
And here we go, starting with preparing the dough. Therefore take the 25 g of cashews and mix them with the same amount of water so you will get a smooth cashew cream. Put the spelt flour in a deep bowl and mix it with 1/2 l of water. Add the just made cashew cream and mix everything again until you have a smooth dough. cover it with a plate and let it rest for around 30 minutes.
Meanwhile we can start with preparing the filling. This will need some time because you have to chop everything 😅. So cut some small cauliflowers and broccoli florets. The mushrooms should be cut like thin leaves. And the carrots like thin pins.
Put some oil in a pan and cut the onion in small cubes. Sauté the onions and if you want add some garlic to it. Afterwards add all the other vegetables you have chopped before and fry them on small fire for around 5-10 min. Add some nutmeg, pepper and salt.
The dough should have rested long enough by now. Take it out of the bowl and roll it out to a quite thin rectangle. Don't forget to put some flour on the table so the dough wont stick to it all the time. Put some of the vegetables in the center and wrap it up. Put the strudel on a baking paper and bake it for around 30 minutes with 180°C.
Let's start with preparing the sauce! I really loved this one by the way 😍! I mean the taste but to prepare it it was also really easy. Basically you just have to put everything together and mix it. Oh, and chop the herbs and press out half of a lemon!
And now you should be ready! Take out the strudel and cut it into pieces as big as you want. Take out a deep plate and fill it a bit with your made green sauce. Place the strudel on top of it and decorate it with some parsley or anything else.
- I would add some more parsley and dill to the sauce next time.
- don't make the dough to thin and use really a lot of flour on the table or otherwise everything will tear up... was a bit annoying 😅
