This post is for my foodie friends...
I am one of those so-called “weirdos” who enjoys taking pictures of my food, especially colorful pictures. It makes it easier to track what I’m eating and also remember something I’d like to make again! My latest eats have been fairly simple and straight forward (maybe with the exception of the bread I made from scratch... I will share the recipe down below!) The Bread and Mini Tacos were my attempt to get my lil kiddo to eat more variety - it worked 👍🏻

Sweet Potato, Banana & Pumpkin Bread
Ingredients:
1 1/2 cup white whole wheat flour
1/2 cup oat bran
1 tbsp baking soda
1 tsp pumpkin pie spice
1 cup milk
1 1/2 tsp vanilla
1/3 cup apple sauce (add cinnamon)
3/4 tsp apple cider vinegar
1/2 cup brown sugar
1/2 cup mashed banana
1/2 cup canned pumpkin
1/2 cup mashed sweet potato
Directions:
Preheat oven to 420.
Peel, cut and boil sweet potato until soft, then mash.
Mix together all dry ingredients in large bowl.
Mix together all wet ingredients in separate bowl.
Combine ingredients by adding wet into dry mixture.
Pour into greased pan or baking dish.
Bake at 420 for 20 minutes.
Turn heat down to 400, bake for another 15-20 minutes, checking with toothpick.
Cool for at least 30 minutes.
