ROASTED THYME AND LEMON CHICKEN

Juicy, moist, succulent roast chicken with the flavor of citrus and thyme.
INGREDIENTS
4 chicken thigh fillets – free range
6 fresh sprigs of thyme
¼ cup of lemon juice
2 teaspoons of lemon zest
1 tablespoon of olive oil
2 carrots – sliced
2 cups of Brussel sprouts – halved
3 cups of cauliflower – florets
METHOD
Preheat oven to 390F.
In a roasting pan, pour oil, juice, zest, and thyme.
Place chicken in and coat completely.
Into the oven and bake till chicken is cooked through.
In a steamer, steam vegetables.
Serve with chicken, hot and fresh.
