Java Apem
Ingredients :
275 gr rice flour
100 gr cassava tape
½ tablespoon of instant yeast
100 gr brown sugar, puree
2 tbsp sugar
150 mL coconut water
250 mL thick coconut milk
¼ tsp salt
How to make :
- Blend cassava tape, mix with sugar and instant yeast.
Squeeze until sugar is well blended and dissolved. - Add the rice flour to the dough, mix well
- Pour the coconut water bit by bit while diuleni by hand for 15 minutes
- Put salt and coconut milk little by little while flat on the floor
- Let stand dough for approximately 1 hour to expand
- Heat molds of apem / mud cakes, rub with a little oil
- Pour batter apem, wait until it looks holes, cover
Flip it until the underside is ripe.
